I LOVE this pasta dish! The combination of fresh tomatoes, seasoned chicken, melted mozzarella, pasta, and fresh basil makes this a household favorite! Not to mention it is almost all cooked in 1 baking dish! This is a great weeknight meal and is super easy to put together. I have been making this dish for years and it is enjoyable every time!
Prep time: 8 minutes Cook time: 30 minutes
Ingredients:
-2 chicken breasts (boneless)
-2 1/2 pints cherry tomatoes (and if you have other tomatoes on hand you can put a few in)
-3 cloves of garlic (skin on)
-2 1/2 tablespoons olive oil
-1/2 teaspoon salt
-1/2 teaspoon pepper
-1/4 paprika
-1/4 thyme
-1/4 red pepper flakes
-1/8 onion powder
-12 oz penne (you can substitute GF pasta)
-1/4 cup chopped fresh basil.
-1 cup chopped mozzarella
-1 cup shredded parmesan
Next Step:
-Preheat oven to 400 F
-Add the 2 chicken breasts in the middle of a large baking sheet.
-Add the tomatoes all around the chicken.
-Add in 3 cloves of garlic (skin on)
-Drizzle the olive oil all over the chicken and tomatoes.
-In a small bowl combine the salt, pepper, paprika, thyme, red pepper flakes, and onion powder.
-Then sprinkle all over the chicken and tomatoes.
-Bake for 30 minutes.
-Boil a large pot of water and cook the penne to al dente. (Try and time that your pasta is done at the same time as the chicken.
-Take the chicken and tomatoes out of the oven and leave in the baking dish.
-Using 2 forks, shred the chicken.
-Take the skin off the garlic.
-Using a potato masher, press down on all of the tomatoes and garlic to create a sauce. Stir.
-Add the mozzarella, parmesan, drained pasta, and chopped basil to the baking dish. Stir.
-Serve and ENJOY!!!
