Of all the oat bakes that I make, this one is my daughters favorite! It may not be the prettiest picture, but I assure you this oat bake is delicious!! This healthy breakfast is packed with protein, fiber, vitamins, antioxidants, and omega-3 fats. The combination of blueberries and Nutella is so good!
Prep time: 5 minutes Cook time: 30 minutes
Ingredients:
-1/3 cup quick rolled oats
-2 tablespoon flour (you can substitute GF flour)
-1 tablespoon light brown sugar
1/2 teaspoon ground flaxseed
-Pinch of salt
-1/4 teaspoon baking powder
-1 tablespoon salted butter (melted)
-1/4 cup oat milk
-1 tablespoon pure maple syrup
-1/8 teaspoon vanilla extract
-1 egg
-1/4 cup fresh blueberries
-1 big tablespoon Nutella
Next Step:
-Preheat oven to 350 F and lightly butter a 6oz ramekin.
-In a medium bowl combine the melted butter, maple syrup, milk, sugar, salt, and vanilla. Whisk to combine.
-Add in the egg and whisk.
-Next, add in the oats, flour, flaxseed, and baking powder. Whisk to combine.
-Fold in the blueberries.
-Add half of the mixture to the ramekin.
-In a microwave safe bowl heat up the Nutella so it will drizzle easier.
-Drizzle 1/2 of the Nutella on the mixture.
-Add the rest of the mixture on top and then drizzle/swirl the remaining Nutella on top.
-Bake for 25-28 minutes.
-Serve immediately and ENJOY!
