These healthy breakfast bars are bursting with blueberries!! They are so delicious and filled with yogurt, oats, honey, oat milk, eggs, white whole wheat flour, and more! They are amazing right out of the oven or can be frozen and toasted with a little butter for busier days. I love to serve these bars for breakfast, brunch, an afternoon snack, and great to pack for school lunches.
Prep time: 8 minutes Cook time: 50 minutes
Ingredients:
-3/4 cup vanilla fat free greek yogurt
-1/4 cup oat milk (you can use any milk)
-2 eggs
-1 1/4 teaspoon vanilla
-1/2 cup honey
-1/4 cup salted butter (melted)
-1 cup quick rolled oats
-1 cup white whole wheat flour
-1 1/4 teaspoon baking powder
-1/2 teaspoon baking soda
-1/2 teaspoon ground cinnamon
-1/4 teaspoon salt
-1 1/2 cups fresh blueberries
Next Step:
-Preheat the oven to 350 F and line an 8x8 baking dish with parchment paper.
-In a mixing bowl combine the yogurt, milk, and honey. Whisk to combine.
-Then add in the eggs and vanilla and whisk.
-Next, add in the melted butter and whisk. Set aside.
-In a large bowl add the oats, flour, baking powder, baking soda, cinnamon, and salt. Stir to combine.
-Pour the wet ingredients into the dry ingredients and whisk until combined.
-Gently fold in the blueberries and mix.
-Pour the batter into the baking dish.
-Bake for 45-55 minutes or until a toothpick inserted comes out clean and the edges are a nice golden brown.
-*Around the 40 minute mark I placed a sheet of aluminum foil on top.*
-Let cool for 15 minutes.
-Serve and ENJOY! (I love it with a big cup of coffee :)
