If there is such a thing as a perfect cookie, then I am nominating this recipe! OMG this cookie is everything! The dark chocolate and peanut butter swirl throughout this cookie makes every bite delicious!
Ingredients:
-1/2 cup salted butter (room temperature)
-1/3 cup brown sugar
-1/3 cup granulated sugar
-1 egg
-1 teaspoon vanilla extract
-1 cup all purpose flour
-1/4 teaspoon salt
-1/2 teaspoon baking soda
-1 cup dark chocolate chips (divided)
-3 tablespoons peanut butter

Next Step:
-Add the butter, brown sugar, and granulated sugar into a large bowl. Using a hand or stand mixer, mix until combined.
-Then add in the egg and vanilla extract. Mix and set aside.
-Add the flour, salt, and baking soda to a small bowl and whisk to combine.
-Pour the flour mixture into the wet ingredients and mix until combined.
-Fold in 1/2 cup dark chocolate chips.
-Cover the cookie dough and put in the freezer for 20 minutes.
-Take out and place a piece of parchment paper on your cutting board.
-Slice the cookie dough ball in half. Set one aside.
-Spread out the cookie dough with your hand and try to shape into a rectangle. Fold the parchment paper over the cookie dough rectangle and place back in the freezer for 20 minutes. (Repeat this step with the other cookie dough ball)
-Preheat oven to 350 F and line a baking sheet with parchment paper.
-Melt 1/2 cup of dark chocolate chips in the microwave making sure to stir every 25 seconds. Repeat until the chocolate chips are melted. Set aside.
-Take out the cookie dough.
-Place another piece of parchment paper on top of the dough (so there is a piece on both sides of the dough)
-Roll the dough using a roller to shape and thin out the "rectangle"
-Repeat with the other cookie dough rectangle.
-Spread the peanut butter all over one cookie dough. Set aside.
-Spread the melted chocolate on the other cookie dough.
-Gently place the cookie dough with peanut butter on top of the chocolate one so it is layered. (cookie side down)
-Gently fold the elongated side up and then for the other side up placing it on top. It will look like you have a log.
-Slice the cookie dough log and place the pieces on your baking sheet.
-Bake for 11-13 minutes.
-Take out and let rest for 10 minutes.
-Serve and ENJOY!!!
