These chocolate chip swirl muffins are so delicious! I love a bitesized muffin to serve at brunch, to have as a snack, and perfect to pack in school lunches. They are sweetened with maple syrup and have a delectable chocolate swirl in the middle!
Prep time: 10 minutes Cook time: 11 minutes Yields: 15 mini muffins
Ingredients:
-1 1/4 cup flour
-1/4 cup coconut oil (melted)
-1 egg
-1/4 cup oat milk
-1/2 cup pure maple syrup
-2 tablespoons brown sugar
-1 1/2 teaspoons baking powder
-1/2 teaspoon salt
-1/2 cup dark chocolate chips (melted)
Next Step:
-Preheat oven to 375 F and lightly butter a mini cupcake pan.
-In a small bowl combine the flour, baking powder, salt, and brown sugar. Stir to combine.
-In a medium size bowl add the coconut oil, egg, oat milk, and maple syrup. Whisk to combine.
-Pour the flour mixture into the wet mixture.
-With a hand mixer, mix to combine for 1 minute. Set aside.
-In a microwave safe bowl melt the chocolate chips on 25 second increments, stirring each time.
-Add one tablespoon of batter to the bottom of the muffin pan.
-Then add a teaspoon of the melted chocolate.
-Top off with another tablespoon of the batter.
-With a toothpick, gently swirl the batter around.
-Make sure your batter comes to the top of the muffin pan. That way they get a nice rounded top.
-Repeat for all 12 mini muffins.
-Bake for 11 minutes or until a toothpick inserted comes out clean.
-Let rest for 5 minutes.
