These cinnamon sugar muffins are perfect for breakfast, brunch, or a midday snack! I love to pair mine with a big cup of coffee or tea. They are easy to make and so delicious!!
Ingredients:
-5 tablespoons salted butter (softened)
-3/4 cup granulated sugar
-1 egg
-1/3 cup sour cream
-2/3 cup oat milk
-1 teaspoon vanilla extract
-2 cups flour
-1 teaspoon baking soda
-1/2 teaspoon ground cinnamon

Cinnamon Sugar Sprinkle:
-1/4 cup granulated sugar
-1/2 tablespoon ground cinnamon
Next Step:
-Preheat oven to 350 F and line a 12 cup muffin pan with cupcake liners.
-In a large bowl using a hand or stand mixer combine the butter and sugar.
-Next, add in the egg, sour cream, milk, and vanilla extract. Mix to combine.
-In a separate bowl whisk together the flour, baking soda, and cinnamon.
-Pour into the wet ingredients and mix until combined.
-Stir together the cinnamon sugar sprinkle and set aside.
-Add a scoop of batter into the muffin pan, then sprinkle 1/2-3/4 teaspoon of the cinnamon sugar sprinkle on top. Then add another scoop of batter on top.
-Take a toothpick and gently swirl the batter.
-Then sprinkle more cinnamon sugar on top.
-Repeat until all 12 muffin cups are full.
-Bake for 20-22 minutes. (make sure they are cooked through)
-Let rest for 10 minutes.
-Serve and ENJOY!!!
