Double Chocolate Zucchini Loaf!


This chocolate zucchini loaf is perfect to make for Mother's Day! We will be going to a family brunch and I will be bringing this loaf! It is always a big hit with kids and adults. It is packed with zucchini and chocolate and is SO good! Happy Mother's Day to all the Mama's! xo


Prep time:10 minutes Cook time: 45 minutes

Ingredients:

-1 1/2 cup shredded zucchini

-1/2 cup granulated sugar

-1/4 cup dark brown sugar

-1/4 cup salted butter (melted)

-2 eggs

-1/4 cup fat free vanilla greek yogurt

-1 teaspoon vanilla extract

-1 1/4 cup all purpose flour

-1/2 cup unsweetened cocoa powder

-1/4 teaspoon espresso powder

-1/2 teaspoon baking powder

-1/2 teaspoon baking soda

-1/4 teaspoon salt

-1 cup dark chocolate chips

Next Step:

-Preheat oven to 350 F and line an 8x4 loaf pan with parchment paper.

-Shred the zucchini on a dish towel. Fold the dish towel over the shredded zucchini and set aside.

-In a small bowl combine all of the dry ingredients. The flour, cocoa powder, baking powder, baking soda, and salt. Whisk and set aside.

-In a large bowl add the granulated sugar, brown sugar, and melted butter. Whisk to combine.

-Then add in the egg, yogurt, and vanilla. Whisk.

-Go back to the zucchini and fold the dish towel around the zucchini. Lightly squeeze out any excess water over the sink.

-Then add the zucchini to the wet mixture and whisk to combine.

-Pour the flour mixture into the zucchini mixture and mix with a spoon.

-Add in the chocolate chips and stir.

-Pour the batter into the loaf pan.

-Bake for 45 minutes or until a toothpick inserted comes out clean.

-Take out and let rest for 10 minutes.

-Serve and ENJOY!!
