Garlic Chicken & Broccoli with Ramen!


Garlic chicken with broccoli and ramen is one of the best weeknight dinners. It is easy to make, so flavorful, and delicious!! My kids beg for me to make this meal. The combination of chicken, broccoli, and ramen with the sauce is SO good. I hope you enjoy it as much as we do!


Prep time: 10 minutes Cook time 15 minutes

Ingredients:

-1 1/2 lb chicken breast (cubed)

-2 tablespoons dark sesame oil

-1 tablespoon soy sauce

-A large bunch of broccoli (chopped)

-2 to 3 packages of ramen noodles (discard the packets) (you can substitute GF Ramen or Rice noodles)

-1/3 cup soy sauce

-1 tablespoon cornstarch

-1/2 cup organic chicken broth

-1 tablespoon rice wine vinegar

-2 tablespoons brown sugar

-3 cloves of garlic (chopped)

-Salt and pepper

-Garnish with green onions and sesame seeds


Next Step:

-In a small bowl combine 1/3 cup soy sauce, chicken broth, rice wine vinegar, brown sugar, and garlic. Mix with a spoon to combine.

-Add in the cornstarch and mix. Set aside.

-Boil a large pot of water to cook your ramen noodles.

-Cube the chicken and season with salt and pepper.

-Chop up the broccoli and set aside.

-In a large pan heat up 2 tablespoons of dark sesame oil. Add the chicken

and cook completely. Add 1 tablespoon of soy sauce to the chicken while cooking.

-Take out chicken and set aside.

-In the same pan add 1 tablespoon of sesame oil and cook the broccoli. When it turns bright green (and the consistency you prefer) add the chicken back in.

-Add the ramen noodles to the salted boiling water. These will cook very fast so keep an eye on it. It should take between 2-3 minutes.

-When the noodles are done, drain them and add them to the chicken and broccoli.

-Pour the soy sauce/chicken broth mixture over the chicken and broccoli and let simmer for 2-3 minutes.

-Garnish with green onions and sesame seeds.

-I like to add a little sriracha on top! (after I give the kids their portions :-)

-Serve and ENJOY!!
