I am loving these delicious mini cinnamon sugar pumpkin muffins! They are so easy to make (1 bowl and a whisk!!) and are ready in 15 minutes. My family enjoys these muffins for breakfast or a quick snack on the go.
Ingredients:
-1/4 cup salted butter (melted)
-1/2 cup brown sugar
-1 1/2 teaspoons vanilla extract
-1 cup canned pumpkin (not pumpkin pie filling)
-1 egg
-1/2 cup oat milk
-1 3/4 cups flour
-1 teaspoon ground cinnamon
-1 teaspoon pumpkin spice
-1 1/2 teaspoon baking powder
-pinch of salt
Topping:
-2 tablespoons unsalted butter (melted)
-1/4 cup sugar
-1 teaspoon ground cinnamon
Next Step:
-Preheat the oven to 375 and line a mini muffin pan with liners.
-In a large bowl bowl whisk together the melted butter and brown sugar. Then add in the vanilla, pumpkin, egg, and oat milk. Whisk to combine.
-Next, add in the flour, cinnamon, pumpkin spice, and salt. Whisk to combine.
-Using a small cookie scooper, add one scoop to each mini muffin liner.
-Bake for 10 minutes or until a toothpick inserted comes out clean.
-Take out and let cool.
-For the topping, stir together the sugar and cinnamon.
-Melt the 2 tablespoons of butter and lightly brush the butter on the top of the muffin. Then dip the muffin the the cinnamon/sugar mix.
-Repeat this step until all muffins are coated in the cinnamon/sugar mix.
-Serve & ENJOY!!!
