These are one of my favorite go to nutty bars! They are chewy, crunchy, and sweet! I love the combination of almonds, cashews, pecans, and apricots. These bars are great for a quick breakfast on the go or for a healthy snack. They are filled with protein, fiber, potassium, calcium, and heart healthy fats. They are super tasty and a great homemade healthy treat for the whole family!
Prep time: 10 minutes Freeze time: 30 minutes
Ingredients:
-1/4 cup chopped apricots (chopped small) and fill to the top and push down.
-1/2 cup almonds (roasted and salted)
-1/2 cashews
-1/2 pecans
-1/2 cup rolled oats (Regular or Gluten Free)
-3/4 teaspoon cinnamon
-1/8 teaspoon nutmeg
-1/8 salt
-2 tablespoons almond oil
-2 tablespoons cashew butter (unsweetened)
-1/4 vanilla extract
-2 tablespoons of raw honey
-2 tablespoons of pure maple syrup
Next Step:
-Add parchment paper to a 8.5 bread loaf pan. (the parchment paper is very important in this recipe, use a bigger piece so you have some left over to fold over your bar when it goes into the freezer)
-In a blender, add the almonds, cashews, and pecans. Quickly pulse a few times. You want some of the nuts to remain halved.
-To your nut mixture add the oats, cinnamon, nutmeg, salt, apricots and stir.
-In a separate small bowl add the almond oil, cashew butter, vanilla extract, honey, and maple syrup. Stir with a spoon until combined. Then add to the nut mixture and stir until fully combined.
-Add the mixture to the loaf pan and spread out evenly. Press down with a spoon or spatula.
-Fold the remaining parchment paper over your bars and put in the freezer for 30 minutes.
-Slice into the size of your choice and ENJOY!!!
