Parmesan Zucchini!! (Baked!)


This is the best appetizer! Perfect to serve at holidays, BBQ's, parties, and get togethers. It is healthy and SO delicious! This baked parmesan zucchini appetizer is easy to make and bursting with flavor! I love all of the herbs, parmesan, and breadcrumbs coating the zucchini. You can serve this with or without a side of marinara sauce. Be sure to serve immediately! Enjoy! xo


Prep time: 10 minutes Cook time: 20 minutes

Ingredients:

-1 large zucchini

-2 tablespoons olive oil

-1/3 cup grated parmesan

-2 tablespoon Italian style bread crumbs (you can substitute GF bread crumbs)

-1/2 teaspoon dried basil

-1/2 teaspoon dried thyme

-1/2 teaspoon dried oregano

-1/4 teaspoon garlic powder

-1/2 teaspoon ground pepper

-1/4 teaspoon salt

-1/4 teaspoon red pepper flakes


Next Step:

-Preheat the oven to 350 F.

-Slice the zucchini into strips.

-Drizzle olive oil all over the zucchini.

-In a small bowl combine the parmesan, bread crumbs, basil, thyme, oregano, garlic powder, ground pepper, salt, and red pepper flakes. Mix to combine.

-Pour the parmesan mixture all over the zucchini and mix.

-Line them on a cooling rack and place the cooling rack over a large baking sheet.

-Bake for 17 minutes.

-Then turn the oven to broil for 2-3 minutes to help them crisp up. Watch this step carefully so they don't burn.

-Take out and serve immediately.

-You can serve these with or without a marinara dipping sauce.
