Penne with Sun Dried Tomato Pesto!


This is one of my favorite pasta dishes! The combination of fresh basil leaves with sun dried tomatoes, pine nuts, fresh parmesan and, more makes for the most delicious pesto sauce! It is a family favorite and great to make on busy days! This dish can be ready and on the table in 20 minutes. I prefer to use sun dried tomatoes that you find in the produce section of the supermarket. (Not the jarred ones in oil)


Prep time: 8 minutes Cook time: 8 minutes

Ingredients:

-1 cup Sun Dried Tomatoes (dried and NOT in oil or water)

-1 heaping cup of fresh basil leaves

-1/3 cup pine nuts

-1/2 cup fresh grated parmesan

-3 cloves of garlic

-3/4 cup olive oil (a good one)

-1/2 teaspoon salt

-1/2 teaspoon pepper

-1/2 teaspoon red pepper flakes

-1 lb penne

-extra parmesan and basil to garnish


Next Step:

-Put a large pot of water on the stove to boil.

-Using your blender, add the sun dried tomatoes, basil leaves, pine nuts, parmesan, garlic, olive oil, salt, pepper, and red pepper flakes.

-Blend on high until it is fully blended. Set aside.

-Salt the boiling water.

-Add the penne and cook until al dente.

-Set aside 1 cup of cooked pasta water.

-Drain the pasta and immediately put back into the pot you cooked it in.

-Add the pesto and 1/2 cup of pasta water.

-Stir to combine.

-Add more pasta water if needed.

-Serve into bowls and garnish with parmesan and fresh basil.
