Pumpkin Oat Chocolate Chip Waffles!!


These are by far the best waffles I have made!

They are crisp on the outside, soft and fluffy on the inside, and bursting with flavor! I was only able to take one picture because my kids scarfed them down so quick! These waffles are also healthy with only 3 tablespoons of sugar, tons of oats, pumpkin, eggs, and oat milk.

I can't wait for you to try them!


Prep time: 15 minutes Cook time: 3-5 minutes

Dry Ingredients:

-1 1/2 cup of flour

-3 tablespoons of brown sugar

-3/4 teaspoon of baking powder

-1/2 teaspoon baking soda

-1/4 teaspoon salt

-1/2 teaspoon of pumpkin spice

-1 teaspoon of cinnamon

-1/2 cup of rolled oats

-2/3 cup dark chocolate chips


Wet Ingredients:

-1 cup of oat milk

-2 large eggs

-1/4 cup pure maple syrup

-1 cup of pumpkin (*NOT canned pumpkin pie and make sure to add only 1 cup *not the whole can)

-3 tablespoons of butter- melted and slightly cooled

-3/4 teaspoon vanilla extract.


Next Step:

-Preheat your waffle iron.

-In a bowl add your oat milk and rolled oats. Mix with a spoon until combined and set aside for 10 minutes so the oats absorb some of the milk.

-In another bowl combine your dry ingredients. Flour, baking powder, baking soda, salt, pumpkin spice, cinnamon, and brown sugar. Whisk until combined.

-Once your oat mixture is finished resting, add the eggs, maple syrup, pumpkin, butter, and vanilla extract. Mix until combined.

-Slowly add your wet ingredients to your dry ingredients and whisk until fully combined.

-Add 2/3 dark chocolate chips and stir.

-Lightly spray your heated iron waffle with any olive oil spray you have on hand.

-Add your mixture to your waffle pan to cook.

-When your waffles are finished cooking, lightly sprinkle with powered sugar.
