Is there anything better than creamy chocolate caramels wrapped inside a chocolate chip cookie!?! These are incredible and perfect to make with your extra Easter candy! I love them warm right out of the oven when the caramel is melted. This is by far my favorite treat! They are easy to make and will definitely be a huge hit when served! Enjoy!
Prep time: 8 minutes Cook time:11-12 minutes Cool time: 10 minutes Yields: 20 Cookie Bites
Ingredients:
-1 1/2 cups all purpose flour
-1/2 teaspoon baking soda
-1/4 teaspoon baking powder
-1/8 teaspoon salt
-1/2 cup salted butter (melted)
-1/2 cup brown sugar
-1/2 cup granulated sugar
-1 teaspoon vanilla extract
-1 egg
-1/2 cup mini dark chocolate chips
-20 Rolo's
Next Step:
-Preheat oven to 350 F and lightly butter a mini muffin pan.
-In a small bowl combine the flour, baking soda, baking powder, and salt. Whisk to combine.
-In a large mixing bowl add the melted butter, brown sugar, and granulated sugar. Mix with a hand mixer until combined.
-Then add the in the vanilla and egg. Mix to combine.
-Slowly add in the flour mixture and mix for 1-2 minutes.
-Stir in the chocolate chips.
-Fill each mini muffin tin with the chocolate chip batter. (Be sure to fill almost to the top)
-Bake for 11-12 minutes until the edges turn a light golden brown.
-Take out and immediately press 1 Rolo into the center of your cookie bite. Repeat for each one.
-Let cool for 10 minutes and then take out of the muffin pan.
-Serve and ENJOY!!!
