Skillet Coffee Cake!!

Is there anything better then fresh baked coffee cake with a crisp crumble on top!?!

This coffee cake is easy to make and is SO delicious!! The center is light and moist and the crumble on top is incredible. You can serve this for breakfast, brunch, or dessert! I always pair my slice (or 2 :-) with a hot cup of coffee. Is there any other way?!? Enjoy!! xo


Prep time: 8 minutes Cook time: 21 minutes

Ingredients:

-1/2 cup all purpose flour

-1/2 teaspoon ground cinnamon

-1/4 teaspoon baking powder

-1/4 teaspoon baking soda

-2 tablespoons salted butter (softened)

-1/4 cup fat free vanilla greek yogurt

-1/4 cup granulated sugar

-1 egg white

-1 teaspoon espresso instant coffee.

Crumble Topping:

-2 tablespoons all purpose flour

-1 tablespoon dark brown sugar

-1 tablespoon granulated sugar

-1 tablespoon salted butter (softened)

-1/2 teaspoon ground cinnamon

-3/4 teaspoon instant espresso coffee


Icing:

-1/2 cup powdered sugar

-1 tablespoon salted butter (softened)

-1/2 teaspoon vanilla extract

-2 to 3 teaspoons oat milk (any milk will work)

-pinch of salt

Next Step:

-Preheat oven to 350 F.

-Grease a 6 1/4 mini cast iron skillet with butter. You can also use a 6 in x 2in round pan if you don't have a cast iron skillet.

-In a medium size mixing bowl combine the butter and sugar and mix with a hand or stand mixer.

-Then add in the yogurt and instant coffee. Mix.

-Then add in the egg white and mix until combined.

-In a small bowl, combine the flour, cinnamon, baking soda, and baking powder. Mix with a spoon to combine.

-Pour the dry ingredients into the wet ingredients and mix until blended.

-Pour the mixture into your cast iron skillet. Set aside.

-Start working on the crumble.

-In a small bowl combine the softened butter and instant coffee. Then add in the brown sugar, granulated sugar, and cinnamon. Mix with a spoon to combine, then with your hand to form a crumble.

-Sprinkle the crumble all over the mixture in the cast iron skillet.

-Bake for 21 minutes or until a toothpick inserted comes out clean.

-Take out and let cool completely.

-Once cooled make the icing.

-In a medium size mixing bowl combine the softened butter, sugar, vanilla extract, and milk. With a hand mixer, blend until you have a light and creamy icing.

-Drizzle the icing all over the coffee cake.

-Serve and ENJOY!!!
