It rhubarb season!! The combination of fresh strawberries and rhubarb is incredible. Every year I enjoy making a batch of strawberry rhubarb sauce. It is so delicious! I love eating it warm with a scoop of vanilla ice cream, or served on top of pancakes! My kids prefer eating it alone cold right out of the refrigerator.
Ingredients:
-2 cups fresh strawberries (hulled and cut in pieces)
-3 cups rhubarb (sliced in 1/2 inch pieces)
-1/2 cup brown sugar
-1/4 cup orange juice
-Sprinkle of sea salt
-1/2 teaspoon cornstarch
-Vanilla ice cream (optional)
Next Step:
-On the stovetop combine the strawberries, rhubarb, brown sugar, orange juice, and salt in a pot.
-Bring to a boil and then simmer 20 minutes (covered) until all the ingredients are softened.
-Combine 1/2 teaspoon of cornstarch with 1 tablespoon of the sauce and mix well.
-Add the mixture to the strawberry rhubarb sauce and stir until thickened.
-Serve warm with a side of vanilla ice cream.
(It is also good cold if you prefer it that way)
